WHere is a home-style interpretation of a cocktail from the seasonal cocktail list. This is a party-sized prepared mix which is loaded full of flavours associated with festive period, rendering it excellent for a festive gathering. Reserve the remaining citrus syrup for morning drinks, puddings, or to mix another batch of the drink.
The Bikini Cocktail
Yields 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Citrus Syrup: Combine all the items in a saucepan, heat until it reaches a gentle boil, stirring so the sugar melts. Then, take off the heat and let it to cool down completely. Pour to a sealable bottle, cap it and refrigerate it in the refrigerator, it can be stored for up to one month.
To make Premix: Pour the specified spirits and syrup into a sizeable container, let it rest for 60 minutes, then pass it through best through cheesecloth, making it perfectly clear.
When ready to serve: Measure 85ml from the batch mix to a cocktail shaker filled with ice, and stir lightly for one minute to chill. Strain into a frosted cocktail glass or a similar vessel, garnish with the cranberries and finish using a quick spritz with the mandarin essence above the glass.
